Let the Canning Begin!

So I got on the internet, bought myself some canning equipment and got to work on canning some salsa...most all of the ingredients came from my garden...hoorah!

Black canning pan, Walmart, $19.98
 1 pint canning jars, $7.98 at Walmart
Anaheim peppers, onions, tomatoes and bell peppers all from my garden!  Garlic, cilantro and corn from the grocery store...around $4.00 
7 cans of home canned salsa that worked when I canned it and the lids stayed sealed like the directions said they would....seriously priceless! 
And what to do with all the squash that is growing, and growing and growing??? 
Cook up some ground beef and onions 
sautee corn, carrots, onions and some bell pepper in a little olive oil 
 Cut the squash in half and then scoop out all of the innards....this is the strangest squash I got from my garden this year...it was a perfect twin...my kids and husband thought it looked like other things...which will not be mentioned here...
Puree some tomatoes in a blender and then pour over the sauteed vegetables 
Add about 1 cup or a little more of Minute Rice, stir in and then let simmer til the rice is cooked 
 This is what the squash looks like when it's ready for stuffing.  I drizzled some olive oil and some salt and pepper in the squash before putting the rice mixture in
 You can sprinkle some Parmesan or some cheddar cheese over the top and then bake in the oven at 350 for about 30 - 40 minutes or until the squash is tender
Then eat!

  1. That looks yummy. I will have to try that. What my family does is slices the squash tho.ly and some onion and fries with Bacon. It's yummy! -cami
