Buttermilk Muffins & Syrup!

I picked up some buttermilk at the store and wanted to share two amazing recipes with you!
Enjoy!

First:
Buttermilk Syrup
The best stuff for waffles, pancakes, biscuits or on oatmeal....this stuff is to die for and only made once in a while at our place because we've been known to drink this addictive butter laden concoction directly from the jar!
1 1/2 cup sugar
3/4 cups buttermilk
1/2 cup butter
2 tablespoons corn syrup
1 teaspoons baking soda
2 teaspoons vanilla extract

Mix all of the above ingredients together (except the vanilla) and bring to a boil and cook for 7 minutes...remove from heat and stir in the vanilla. This recipe was found on-line on allrecipes.com....and next...

Buttermilk Spice Muffins
(Mimi's Cafe recipe...mmmm)

Muffin Batter:
1 cup sugar
1/2 cup butter
3 eggs
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup + 1 tablespoon buttermilk

Nut Topping:
1/2 cup sugar
1 cup walnuts (I'm allergic to walnuts so I used almonds & peanuts)
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Grease the baking tins with butter. Pre-heat oven to 375. In a mixing bowl, cream the sugar & butter together. After thoroughly mixing add eggs & beat one more minute.

Sift dry ingredients together and then alternate adding the dry ingredients and buttermilk to the wet mixture. Make the topping.

Fill the muffin tins 3/4 full with batter, scoop large tablespoons of topping and bake about 15 - 20 minutes until golden brown and a toothpick comes out clean....oh so good!
